Zesty Pistachio Cookies, A Taste of Old Key West

Hi everyone!  My names is Figment Foodie. Kristi & Scott have asked if I would share with you some of my favorite Disney inspired recipes and local eateries.  Today, I share with you my recipe for Zesty Pistachio Cookies.  This recipe was inspired by Disney’s Old Key West Resort after my recent stay there. If you have never stayed at Disney’s Old Key West Resort, I highly encourage it.  My husband and I experienced that slow-paced, Old Florida ambiance that inspires relaxation. Once we returned home, I wanted to capture that essence of that magical stay in a cookie recipe that you can create at home no matter how far you are from the Florida sunshine.

Dough: 1 1/4 cup graham flour 1 cup all-purpose flour 1 teaspoon baking soda 1 teaspoon salt 1 cup unsalted butter, softened 1 1/2 cup sugar 2 tablespoons molasses 1 teaspoon vanilla extract Zest of 2 key limes 2 large eggs (make sure the eggs are room temperature, it’s worth the wait) 2 cups white chocolate morsels 1 cup chopped salted pistachios

Frosting: 6 cups powdered sugar 8 ounce package cream cheese (room temperature) 2 sticks butter (room temperature) 2 tablespoons milk Zest of 1 key lime 1 teaspoon vanilla extract 1/4 cup chopped pistachios (reserve these to top frosting)

Preheat oven to 375 degrees F.

Combine flour, baking soda and salt in small bowl. Beat butter, sugar (add slowly), molasses, vanilla extract, and lime zest in large mixer bowl until creamy.

Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and pistachios. Drop dough into 2 inch balls onto greased baking sheets.

Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

While the cookies are in the oven, combine frosting ingredients until smooth. Once cooled, spread a thick layer of frosting on each cookie. Add chopped pistachios on top of cookies.
